You do it by creating a mini mod. The truck interior cameras are found in the def/camera/units folder of an SCS truck (of the scs.def archive) or modded truck. My mouse movement with my hand ranges from 0,5 - 3 cm (5mm - 30mm) movement depending on how tight the curve is (being precise is key).
